Customise or disable fields on personnel records

We would like the ability to disable (or entirely customise) fields in the personnel details > personnel information record.
There is some personal information that, at an organisational level, we do not want recorded in this system. Having the field disabled or not visible would prevent users from storing this information. We find that having the field present invites users to store this unnecessary information.
